Mexican Chicken Stew
- 1 tbsp vegetable oil
- 1 tbsp Adobo Sauce
- 1 chopped onion
- 3 chopped garlic cloves
- ½ tsp dark brown sugar
- 1 can of chopped tomatoes
- 1 tsp chipotle paste
- 4 boneless chicken breasts
- 1 red onion sliced into rings
- Coriander leaves
- Tortillas or rice to serve with
- Heat the oil in a saucepan and add the onion.
- Cook for 5 mins before adding the garlic, sugar, chipotle paste, adobo sauce and tomatoes. Stir.
- Add chicken to the pan and smother with the sauce.
- Simmer for 20 mins until chicken is cooked.
- Remove the chicken and shred before adding it once more to the sauce.
- Sprinkle red onion and coriander over the top before serving with tortillas or rice.
