Peruvian Fried Purple Potatoes
 
 
Ingredients
  • 2 lbs purple Peruvian potatoes, scrubbed
  • ½ cup extra-virgin olive oil
  • 1 tbsp Mexican oregano
  • 1 tbsp minced garlic
  • 1 tbsp cilantro
  • Salt and pepper, to taste
Instructions
  1. Preheat your oven to 400 degrees.
  2. Halve the potatoes and put them in a bowl.
  3. In a separate bowl, mix the olive oil, garlic, salt, pepper, and oregano.
  4. Toss the potatoes in the olive oil mixture and spread them on a sheet pan.
  5. Roast for 30 minutes or until the potatoes are tender.
  6. Sprinkle clinatro on top and serve.
